Most vermouths on the market start with a neutral white wine, which serves primarily as a vehicle for sugar and botanicals. It's a category where the wine is often the least interesting ingredient.

Lustau did it the other way around. The base of this vermouth is two Jerez wines from their own estate — a dry Amontillado, with an oxidative character, and a sweet and silky Pedro Ximénez — aged in criaderas and solera for about 10 years. Only then are the 10 botanicals added, infused separately.

The difference is evident: velvety, with ripe fruit, smoky wood, a hazelnut finish, and a clean bitterness. It's not a sweet vermouth. It's a Jerez wine that decided to become vermouth.
